Cauliflower Fried Rice with Chicken and Soy Sauce

  • 1 head of cauliflower

  • First, remove the leaves and stem from the cauliflower, and then chop it into small florets.
  • In a food processor, pulse the cauliflower until it becomes rice-like in texture.
  • Heat up a large skillet or wok on medium-high heat and add the sesame oil.
  • Once the oil is hot, add the diced chicken and cook until it's no longer pink. Remove from the pan and set aside.
  • In the same pan, add the diced onions and minced garlic. Cook until the onions are translucent.

  • Add the cooked chicken back into the pan and mix well.
  • Add soy sauce to the pan and mix everything until the cauliflower fried rice is evenly coated.
  • Season with salt and pepper to taste.
  • If desired, top with chopped green onions for extra flavor and garnish.
