  • 1/2 red onion, sliced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • lettuce leaves

Instructions

  • To make the falafel, place the chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, salt, and black pepper in a food processor. Pulse until the mixture is finely chopped but not pureed.
  • Transfer the mixture to a bowl and stir in the flour and baking powder.
  • Heat the oil in a large skillet over medium heat. Form the chickpea mixture into small balls or patties and fry until golden brown and crispy, about 2-3 minutes per side.
  • To make the tzatziki sauce, combine the yogurt, grated cucumber, garlic, dill, lemon juice, salt, and pepper in a bowl. Mix well and refrigerate until ready to use.
